Seiun is the result of a bold union between ancestral Japanese traditions and modern creativity, offering a universal and timeless experience.

The Green Wolf, a sake house founded by Eva Green and Hadrien Wolff, has teamed up with Guillaume Ozanne, a master sake brewer (Toji) with over 10 years of experience in some of Japan’s most renowned sagakura (sake breweries), as well as with Kuninocho, a two-hundred-year-old brewery from Osaka, to create the recipe for Seiun.

This project draws on both a millennia-old tradition and contemporary creativity, with the ambition of crafting a universal beverage.

The result is a unique recipe that forms a bridge between past and future, between Japan and the West.

Being is revealed through doing

Polishing
Carefully selected rice is meticulously polished to 70%, reducing the grain and releasing the starch.
Koji
Kōji, a natural ferment, transforms the rice starch into sugars.
FIRST FERMENTATION
The yeast then converts the sugars into alcohol. This first fermentation is intentionally stopped earlier than in traditional sake brewing, allowing for a moderate alcohol content (around 8%) while preserving the aromatic richness of both the rice and the yeast.
FILTRATION & AND BOTTLING
The brew is filtered and a small portion of the finest rice particles is reintroduced before bottling.
SECOND FERMENTATION
A second fermentation starts in the bottle, creating Seiun’s delicate effervescence.
Pasteurisation
Finally, pasteurization halts this second fermentation.

Music and sonor alchemy

Each Seiun cuvée is infused with resonance and vibration.

Scientific research suggests that musical and sound frequencies can influence the fermentation process.

Inspired by this idea, at the crossroads of science and spirituality, we placed a speaker in each brewing tank. Throughout the first fermentation, a selection of tracks with varying frequencies, including recordings of space sounds, is played to stimulate the action of the yeast.
