What is Seiun?

A natural and refreshing sake blending time-honored artisanal methods and modern creativity

Seiun is a sake brewed with only two ingredients: water and rice, fermented with Koji and yeast, which naturally give it a light, refreshing aroma of citrus and pineapple.

The Seiun recipe was developed in collaboration with a French Toji, a master sake brewer with nearly 15 years of experience in some of Japan’s most prestigious sagakura. Seiun is crafted in a two-hundred-year-old brewery in Osaka, following a traditional method, yet open to dreams and discovery.

Seiun contains very fine rice particles, a type of sake known in Japan as Nigori, which dates back over a thousand years. These fine rice particles enable a second fermentation in the bottle, which is the source of Seiun’s natural effervescence.

And boldness

Throughout the fermentation process in brewing tanks, a selection of tracks with varied frequencies — including recordings of space sounds — is played to stimulate the activity of the yeast.

The meaning of

Seiun

Seiun is the adaptation in our alphabet of the Japanese translation of ‘nebula,’ that celestial object which plays a key role in the birth of stars. The natural presence of gas and fine rice particles, as well as their appearance in the bottle and in your glass, evoke a nebula for us.
