At the origin of Seiun: a friendship forged over time, an insatiable curiosity, and a shared desire to craft something beautiful, delicious, and meaningful.

Born of Time, Taste and Trust

Seiun is the first creation of The Green Wolf, a sake house founded by Eva Green and Hadrien Wolff, childhood friends connected by a shared fascination for art, craftsmanship, and genuine pleasures. Their bond, nurtured by over twenty years of shared curiosity, naturally led them to launch a project in their own image.

 The Spark of Sake

Japan holds a special place in Eva’s heart. Long drawn to its culture and the world of sake, she brought Hadrien, an expert on Asia after fifteen years spent between Vietnam, Hong Kong and Japan, into a passionate exploration.

 Learning the Art, Honoring the Craft

Together, they began their training in France under the guidance of Julien Casorla and Siméon Molard from the company Osake, before continuing it in Japan, at the heart of some of the most demanding traditional breweries. There, they discovered the subtleties of sake — from rice selection to kōji cultivation, from polishing to fermentation.

 Forged in Tradition, Defined by Creativity

They chose Kuninocho, a two-hundred-year-old brewery in Osaka, and partnered with Guillaume Ozanne—a master sake brewer (Toji) with over a decade of experience in some of Japan’s most renowned breweries—to develop a unique recipe. From this encounter, Seiun was born.

Eva and Hadrien created The Green Wolf to give Seiun and future creations a home: a sake house that embodies their vision—a fusion of tradition and creativity, offering rare and sincere experiences.
